Ingredients
Pie Crust (See recipe below)
3 - 4 cups cut up turkey chunks (Thansgiving turkey leftover is great for this recipe)
2 tbs extra virgin olive oil
2 tbs salted butter
2 cups chopped carrots
2 cups frozen peas
1 med. chopped onion
2 cloves chopped garlic
1/2 tsp ground pepper
1 tsp kosher salt
2 cups water
2 chicken bouillon cubes
3 tbs cornstarch (mix with 1/4 cup cold water)
1/2 cup heavy cream
3 tbs white wine
1/2 tsp lemon pepper
1/2 tsp poultry seasoning
1/2 tsp ground sage
2 cups of Mashed potatoes (see mashed Potatoe Recipe below)
1 cup shredded cheddar cheese

Instructions
In a large frying pan heat olive oil and butter. saute onions, garlic and carrots. Add in saute mixture salt, pepper,lemon pepper, pultry seasoning and sage. Stir and cook until onions are see through and carrots are slightly tender. Add water, turkey gravy or bouillon cube, wine, cream and turkey chunks into the mixture. Cook for about 10 minutes on med heat. Gravy should be as thick as a pot pie, if needed, add more corn starch. Pour mixture into casserole dish (9x12) with pie crust in it, top with dollops of mashed potatoes, covering the entire top of pie. Sprinkle grated cheddar cheese on top of potatoes. Bake in a preheated 425 degree oven for 35-45 minutes. Questions about this recipe? Email
Buttery & Flaky Pie Crust Ingredients
2 cups (King Authur unbromated all porpose flour)
1/2 cup crisco Shortening
1/2 Cup Butter (1 stick very cold butter)
2 tbs sugar
1/2 tsp kosher salt
6 - 8 tbs ice water(start at 6, add more if needed)

Buttery & Flaky Pie Crust Baking Instructions
In a medium size bowl mix flour, sugar and salt together. Add pea size butter chunks and mix with a pastry cutter until all the butter is coated. Add shortening in and continue to use the pastry cutter until all shortening is mixed. Add the ice cold water in, mix until dough forms. Wrap dough ball in wax paper and place into the refrigerate until cold, about 1 hour. Roll very cold dough on a floured surface making a retangular shape 11x14. Place in a 9x12 casserole dish. Mashed Potatoe Ingredients
4 large baking potatoes
2 tbs salted butter
1/4 Cup sour cream
1 tsp salt
dash black pepper
2 tbs milk
1 tbs chopped chives or parsley flakes (optional)

Mashed Potatoe Instructions
Boling potatoes until tender, drain. Add all the other ingredients and mix with mixer for about 2-3 minutes. Questions about this recipe? Email
